It's aged only for about 4-5 weeks, developing a creamy wet paste and a goaty, tangy flavor. The cheese is rolled in lightly salted ash, which gives it a lovely herbaceous aroma. This creamy cheese becomes firmer and develops an hazelnut aroma with age. Perfect to spread, serve this on a cheese plate with fruits and honey for dessert, or toss with young salad greens and slices of bright citrus fruit. It goes well with a dry white wine.
