This hard mountain cheese is matured in caves where the cheese gets its unique taste, texture and colour. Considered one of the finest cheeses in the world, a wedge of Comte reveals a pale yellow interior and a texture that can vary from silky, flabby to crystalline. The more ripined Comté is, the more slightly salty he becomes. Comté aged of 36 months is more salty and brittle than the youngest. The maturing period gives some crispiness (salt crystals) and softness to the cheese. Comté goes well with many recipes from fondues to Croque Monsieur. The cheese pairs well with Rhone reds, a Palo Cortado or off-dry Amontillado sherry from Spain.
