Emmental Grand Cru is made from raw cow's milk that are fed on the grass from high mountain meadows. Its production zone covers the area from Vosges to Savoie via Franche-Comté. It is a large pressed cheese.
It has a sweet aroma and dry, washed and brushed rind. It has a creamy ivory color, it is fine-grained and soft, with evenly spaced holes varying in size from a cherry to a walnut.
It goes well slivered in a salad, sandwiches or burgers. In gastronomic cooking, its flavor is essential to succeed "soufflés" and "gratin" dishes.
