Flavour : creamy, sweet, salty Aroma : fruity, earthy, spicy Gruyere Swiss is a cow's milk cheese ripened for 15 months from Switzerland. It is traditional, creamery, unpasteurised and hard cheese. The natural, rusty brown rind is hard, dry and pitted with tiny holes. The cheese is darker yellow than Emmental but the texture is more dense and compact. Gruyère is sweet but slightly salty, with a flavor that varies widely with age. Slightly grainy, the cheese has a wonderful complexity of flavours : at first fruity, later becomes more earthy and nutty with age. It goes well with white wines like Riesling.
