Flavour : sweet, milky, woody Aroma : grassy, hazelnut, mushroom Mont d'Or or Vacherin du Haut-Doubs is a raw cow's milk cheese from Franche-Comté, France. Mont d'Or is highly seasonal. Traditionally made with the winter milk of the same cows that produce Gruyere/ Comté in the summer, this cheese is only available from 10th September until 10th Mai. The cheese has a soft, pale brown rind, with deep, wave-like indentations and a yielding texture. Mont d'Or is encircled with spruce bark and packed in a circular spruce box, which both flavours the cheese and gives to the rind a specific appearance of hills. The flavour is rich, a little sweet, with grassy undertones. Mont d'Or can be eaten like a Fondue or on a table chesse. It goes well with wines such as Beaujolais Nouveau, Côtes du Jura and Champagne.
