Flavour : full-flavored, mild, salty, sweet Aroma : pungent Soumaintrain is a cheese from the Burgundy, where local farmers have handcrafted it for more than a century. It is a soft cows’ milk cheese with a washed rind. Soumaintrain is only washed with brine (salted water), which gives the rind a white to orange colouration. It is naturally wrinkled and lightly floral. This cheese has a smooth consistency is soft to the touch, and its flavour is typical of cheeses from the region: quite strong and sweet in the mouth. Usually eaten young, Soumaintrain when cut, exposes a mild, white paste with a close and fine texture. As it ages during six to eight weeks, the flavours become ripe, divulging sweet, salty and creamy milk notes. The cheese tastes excellent with Chablis, Rose, Petite Sirah and of course Marc de Bourgogne.
